Aloo Paratha or Stuffed Potato Paratha is a popular North Indian breakfast dish. The tasty and spicy potato filling is stuffed in whole-wheat dough and rolled to make flatbread and fried in hot tawa using ghee or butter. It can be served with plain yoghurt, pickle or chutney or can be eaten as it is. It ranks top among other parathas because of its taste and it is one of my favorite and I can eat them for breakfast, lunch or dinner :)
Preparation time : 10 mins
Serves : 3
Yield : 6 Parathas
For the dough
2 cups wheat flour
Salt to taste
Luke-warm water
Ghee or butter for frying
Method :
Take 2 cups of wheat flour in a wide bowl and add little salt and 1 cup of luke warm water. Knead the dough well till it becomes soft. If necessary add little more water and make the dough soft (The dough should not stick to your hands and the wheat flour should form a soft and smooth dough)
Cover the bowl. Let the dough rest for 10-20 mins
For the Stuffing :
1 large boiled and peeled potato
1 teaspoon chilly powder
Half teaspoon amchoor powder
Half teaspoon cumin powder
1/4 teaspoon pepper powder
Salt taste
2 tablespoon cilantro or coriander leaves
Method :
Mash the potato and mix rest of the ingredients listed under "stuffing". Keep aside.
Making of Parathas :
Divide the dough into six equal parts and make round balls
Press the dough balls in hand and make it flat around 2-3 inches
Keep small portion of the potato filling in the center and pull the edges of the pressed dough and seal it.
Roll the dough balls using little wheat flour to avoid sticking on the rolling surface and make 5-6 inches of round parathas
Continue same procedure to make rest of them.
Heat iron tawa and sprinkle ghee or butter. Place the paratha on the tawa and fry, apply ghee or butter on the upper side and flip it. Fry till they pluff and turns bown with spots on them.
