Asparagus with ''le-gar-gin''



Asparagus is a spring vegetable packed with lot of nutrients. It is a very good source of fiber, folate, vitamins A, C, E, K, B6 and chromium, a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into the cells. Asparagus also known for its anti-cancer and anti-aging properties.

Today I have stir fried the Asparagus with lemon, garlic and ginger. So the name Asparagus with le-gar-gin. Sounds like a Italian dish, isn't it?. These three ingredients make the asparagus so tasty and crunchy. Kids will love this too.. :). You can serve this as a appetizer or side dish. Great to pack for lunch box. Preparation time : 10 mins
Serves                  :  2-3

Ingredients :
1.5 bunch of asparagus (18 in no)- (Trim around 2 inches of stalks)
1 tablespoon of extra virgin olive oil
1 teaspoon cumin seeds 
1 inch ginger grated 
1 clove garlic minced 
1 tablespoon lemon juice
Salt to taste 
Dash of pepper powder

Method :
Wash the asparagus spears and pat it dry.

Trim around 2 inches of stalk of the asparagus spears so that the hard portion gets discarded.

Cut the asparagus spears into half by cutting in the center.

Heat olive oil in a pan add cumin seeds let it crackle. Then add grated ginger, minced garlic and asparagus. Saute for 10 seconds.

Add salt, lemon juice and pepper powder and cook for 4-5 minutes until tender. Switch off the flame. Serve hot

Note: Take care when you buy the asparagus. Just press the spears for tenderness. If the stalks are bit woody don't buy them.
