Vermicelli Upma

Today I thought of preparing vermicelli upma to pack it for my husbands lunch box.. It is healthy as I have added vegetables in it, and also it is very easy to prepare. It doesn't take much of your time. So when you are in hurry to go to work or you are lazy to prepare something very complicated this is the right dish for you...


Cooking time : 15-20 mins

Serves             :  2 people

Ingredients....
Roasted vermicelli 1.5 cup
Corn, peas and carrots  cut into small pieces - half cup
Onions half cup chopped
Mustard half teaspoon
1 Green chilly
Curry leaves...1 sprig
Turmeric powder half teaspoon
Urad dal half teaspoon
Salt to taste
Lemon juice 1 teaspoon
Boiling water 4 cups
Coriander leaves for garnishing


Method:
Heat oil in pan, toss mustard, urad dal let it splutter. Then add curry leaves, green chilly and onions. Saute onions till they are transparent. 
Add turmeric powder and salt... mix well... add vegetables. mix... then add roasted vermicelli. .. mix well... add boiling water let it cook in medium heat. Keep stirring till the water evaporates. Then add lemon juice.. Garnish with coriander leaves.. Serve hot..
